For me, I’ll stay stock until I can afford all the modifications. I keep telling myself the Golf’s good as is…but those mods look tempting. 
I love the Golf 7 MK7 R! It has great performance and is fun to drive. I’ve had mine for about 3 years, and it’s been mostly reliable. Just keep up with the maintenance schedule.

Maintenance has been pretty reasonable for me. I do the oil changes every 5,000 miles, and I’ve had to replace the brakes once. Nothing major so far!
